Chocolate-Dipped Peanut Butter Balls
Ingredients
3/4 cup Saratoga Peanut Butter Plain Jane Creamy or Chunky Old Fashioned Peanut Butter or Saratoga Peanut Butter Just Almonds! All Natural Almond Butter
1/4 cup agave or honey
1/3 cup coconut flour
½ tsp. vanilla extract
½ cup dark or semi sweet chocolate chips
Instructions
- In a medium-size bowl, mix together the peanut butter (or almond butter), honey, coconut flour, and vanilla until smooth and easy to handle. Add another tablespoon of coconut flour if needed to achieve the right consistency. Scoop dough using a tablespoon and roll the dough between your hands into small balls. Place the balls on a cookie sheet lined with parchment paper, and place in the freezer for approximately 30 minutes to set until firm.
- When the peanut butter (or almond) balls feel firm to the touch, melt the chocolate in a microwave-safe bowl on HIGH power for 30 seconds then stir. If needed, heat an additional 10-15 second intervals, stirring after each interval until melted.
- Remove the peanut butter (or almond) balls from the freezer, and dip each into the melted chocolate, coating thoroughly before placing back on the parchment paper. They may be placed in the refrigerator or freezer for chocolate to set completely,
- Store in an airtight container in the refrigerator for up to 2 weeks, or in the freezer for up to 3 months.
